We are on the search to recruit our dare to be different Food and Beverage Director who will pioneer F& B strategies across all outlets with the support of our Brand led Marketing Framework. Leading a team of high achiever individuals, and reporting to the General Manager, you will be directly responsible for the hotel achieving budgeted margins and revenue growth.

Key Responsibilities

• Lead six F& B departments with a strong focus on revenue growth and cost control.
• Drive performance through key metrics including spend per cover, capture rates, and labour costs.
• Execute targeted marketing initiatives to increase patronage and outlet profitability.
• Oversee daily operations across outlets and events, ensuring seamless service and guest satisfaction.
• Manage budgets, P& L, stock control, and inventory systems to maximise profitability.
• Forecast demand, plan activations, and deliver revenue-driving events and promotions.
• Lead, coach, and develop high-performing teams to build an engaged, accountable culture.
• Partner with the Executive Chef to deliver commercially successful menus and beverage offerings.
• Actively monitor guest feedback and implement continuous improvements.
• Ensure compliance with WHS, food safety, HACCP and RSA standards.
