Key Responsibilities


We are seeking experienced Venue Manager to join the team at Pascale’s Bar & Grill, QT Melbourne’s signature restaurant! This room will also oversee the In Room Dining offering to deliver a high-end and memorable experience to dinners. We are looking for someone that can build and develop a strong team and solid understanding of hotel operations.


  • Lead the Pascale and IRD operations working closely with the Food & Beverage Director, ensuring compliance with hotel policies, procedures, licensing laws, safety standards, and brand expectations.
  • Oversee daily departmental operations, service standards, quality control, handovers, and crisis management to consistently deliver exceptional guest experiences and prevent issues before they arise.
  • Manage staffing effectively through rostering, leave and overtime control, staff entitlements, and cross-venue training to meet financial, operational, and service targets.
  • Recruit, train, develop, and appraise team members, maintaining accurate training records while fostering team morale, cohesion, retention, and a positive service culture.
  • Handle all guest feedback and complaints with professionalism, urgency, and care, ensuring incidents, injuries, and hazards are reported and corrective actions implemented.
  • Drive financial performance by controlling departmental expenses, implementing accounting and cashiering controls, maintaining accurate reporting, and actively identifying business improvement opportunities.
  • Cultivate a strong sale and brand culture by maximising up-selling and on-selling, promoting EVT properties, and acting as a brand ambassador for the venue and hotel.
  • Ensure effective communication and collaboration across departments, support colleagues as required, participate in meetings and training, and maintain strong working knowledge of venue systems and assets.


What You’ll Bring

  • Proven experience as a Venue Manager or similar in luxury hotels, large hospitality groups or fine-dining restaurants.
  • Ideally experience in hotel restaurants, with a good understanding of a high-end food and beverage offering.
  • The ability to identify, analyse and resolve problems that may arise.
  • Strategic in creating new ideas to drive revenue, SPH and guest engagement to dine in-house.
  • Experience running hospitality teams, driven to lead from the front and the ability to train and develop the team.
  • Strong communication and collaboration skills.
  • Solid financial acumen experience managing wage costs, beverage costs and delivering results in line with budgeted revenue and profit targets.
