About the Role

Part classic Aussie restaurant, part modern Melbourne bar, yet completely inspired by the legendary Bossley herself. Bossley Bar & Restaurant is a chic urban oasis that is a nod to her bold opinions and signature style – synonymous with the city she loves.

We are looking for a talented Bar Manager to lead, inspire, and develop our bartender team to perform at a world-class level. You’ll play a pivotal role in managing the beverage offering for the Bossley Bar.

The successful candidate will be responsible for the daily bar operations, beverage offering and development, and team performance. This includes managing costs (wages, beverage COGS, expenses, maintenance, and overheads), ensuring compliance with all health and safety regulations, and actively contributing to revenue-driving initiatives. This is a leadership role for someone who thrives in high-energy environments and knows how to balance operational excellence with unforgettable hospitality.

Skills & Experience

• 2+ years of experience in senior bar management roles within high-volume, premium hospitality venues. Hotel experience preferrable but not essential.
• Expertise in curating and managing premium cocktail, wine, and spirits programs aligned with industry trends and hotel activations.
• Ability to deliver a high-level guest experience, exceeding expectations for clientele and hotel guests.
• Previously managed medium sized bar teams, with a focus on developing and training staff.
• Strong track record in managing beverage COGS, driving profitability through strategic pricing and promotions.
• Skilled in streamlining bar operations for maximum efficiency during peak service periods.
• Adept at planning and executing high-profile activations and events in collaboration with marketing and operations.
• Solid understanding of budget management, cost control, and P& L analysis for data-driven decision-making.
