Key Responsibilities

  • Produce high‑quality pastry items across all outlets, maintaining consistency, creativity and brand standards.
  • Prepare and present a wide range of pastries including cakes, chocolates, petit fours, breads, buffet items, banquet desserts and à la carte offerings.
  • Execute advanced pastry techniques such as piping, glazing, chocolate work and creating elements for showpieces.
  • Collaborate with senior chefs to develop new desserts, test recipes and contribute ideas for seasonal menus and pastry showpieces.
  • Follow all standard recipes, portion controls and preparation methods to ensure quality and minimise waste.
  • Maintain excellent food storage, hygiene and cleanliness standards across all pastry areas.
  • Monitor food quality, presentation and portioning throughout service.
  • Complete requisitions and manage stock in line with hotel procedures.
  • Work efficiently to complete tasks on time while supporting smooth kitchen operations.
  • Uphold grooming standards, hotel policies and WH& S guidelines.
  • Foster positive working relationships within the kitchen team.
  • Attend scheduled meetings and perform additional duties as directed by the Executive Chef or Head Pastry Chef.

What You’ll Bring

  • Proven experience as a Pastry Chef de Partie or strong pastry experience in a similar role.
  • Advanced technical skills in pastry, chocolate work, garnishing and decorative techniques.
  • Creativity and passion for developing innovative desserts and contributing to menu evolution.
  • Strong understanding of pastry production, recipe execution and portion control.
  • Excellent attention to detail with a commitment to quality, consistency and presentation.
  • Ability to work efficiently under pressure while maintaining high standards.
  • Strong organisational skills and a proactive, team‑focused approach.
  • Commitment to hygiene, safety and maintaining a clean, well‑organised workspace.
  • Professional presentation, reliability and a positive attitude.
