About the Role:
The Inchcolm is looking for a passionate Chef de Partie to join the culinary team behind one of Brisbane’s most uniquely charming boutique hotels. Steeped in art‑deco elegance and known for its refined yet intimate dining experiences, The Inchcolm offers a setting where creativity, personality and craftsmanship truly shine.
As a Chef de Partie, you’ll take ownership of your section and work closely with the Executive Chef and Sous Chef to deliver dishes that reflect the hotel’s distinctive style — thoughtful, beautifully executed and grounded in quality produce. Your work will help shape the guest experience at The Inchcolm, where every plate contributes to the hotel’s reputation for sophistication, warmth and a touch of the unexpected.

Key Responsibilities:
• Produce high‑quality dishes across all services in line with Shadow’s standards
• Prepare sauces, soups, hot dishes, salads, sandwiches, desserts and specialty items
• Maintain strong recipe knowledge for all menu items
• Uphold portion control, quality control and waste‑minimisation practices
• Monitor food storage, rotation and cleanliness to meet hotel and WH& S standards
• Ensure all standard recipes are followed across outlets
• Complete assigned tasks efficiently and within required timeframes
• Foster a collaborative, respectful working environment within the kitchen and service teams
• Comply with all operational policies, procedures and safety guidelines
• Care for and maintain kitchen equipment
• Attend scheduled meetings and support the team with additional duties as required

Skills & Experience:
• Previous experience as a Chef de Partie, or a strong Demi Chef ready to step up
• Solid understanding of food preparation, cooking techniques and kitchen operations
• A passion for quality produce and thoughtful, well‑executed dishes
• Strong organisational skills and the ability to stay calm under pressure
• Commitment to high standards of hygiene, safety and presentation
• A collaborative mindset and a genuine love of hospitality
• Clear communication skills and a proactive, can‑do attitude
