Key Responsibilities:
• Maintain impeccable hygiene and food safety standards across all kitchen operations
• Prepare and present high-quality sushi, sashimi, and hot dishes with consistency and attention to detail
• Uphold and actively promote portion control, quality control, and waste minimisation practices
• Support the delivery of exceptional food experiences for daily service, peak periods, and special events
• Collaborate across multiple kitchen outlets to ensure seamless and efficient operations
• Monitor food quality, storage, and stock levels in line with established procedures
• Ensure all dishes are prepared in accordance with standard recipes and presentation guidelines
• Assist in training, mentoring, and developing junior kitchen team members
• Maintain a clean, organised, and safe working environment in line with WHS standards
• Contribute to a positive, professional, and high-performing kitchen culture
What You’ll Bring:
• 2–5 years’ experience in a high-quality, fast-paced kitchen environment
• Demonstrated expertise in Japanese cuisine, with a strong focus on sushi and sashimi preparation
• A genuine passion for precision, consistency, and presentation
• Solid understanding of food cost control, production efficiency, and waste reduction
• Strong organisational skills with the ability to perform under pressure
• Excellent communication skills and the ability to work collaboratively within a team
• A proactive attitude with a strong work ethic and attention to detail
• Confidence in supporting and guiding junior team members
• Certificate III or IV in Commercial Cookery (essential)
