The Conservatory Restaurant is our elegant all-day breakfast destination located on level one of the hotel. It offers a premium buffet and à la carte breakfast service to in-house guests and visiting locals alike. With the capacity to welcome up to 750 guests within a 4-hour window during peak periods, it is a fast-paced, high-touchpoint environment known for its premium product and refined, anticipatory service.

Your Day to Day

· Lead and oversee the daily operations of Conservatory Restaurant, ensuring smooth service delivery and exceptional guest experiences.

· Directly manage a large team of service staff, chefs, and leaders, ensuring the team is motivated, trained, and performing at a high standard.

· Drive operational and financial performance, including managing costs, revenue generation, and achieving guest satisfaction metrics (particularly breakfast service scores).

· Coach, mentor, and develop your team through recruitment, onboarding, training, and leadership development to build the next generation of leaders.

· Ensure the consistent delivery of Forbes Travel Guide-inspired service excellence and anticipate guest needs throughout their experience.

· Collaborate with Sales, Commercial, Rooms Division, and wider hotel operations to ensure smooth coordination, group arrivals, and guest-specific needs.

· Maintain a close focus on quality control, ensuring the food and beverage offerings meet the highest standards.

· Drive initiatives to maximise revenue and efficiency while maintaining a balanced approach to guest satisfaction and operational excellence.

· Peripheral responsibility for In-Room Dining, overseeing the Assistant Manager, coaching, developing, and leading their growth to ensure consistency in service and operational efficiency across all touchpoints.

What We Need From You

· 3+ years of leadership experience in a high-volume, premium breakfast or restaurant environment

· Proven success managing large teams while driving exceptional guest satisfaction results

· Deep understanding and passion for service excellence, luxury guest interactions, and quality food & beverage delivery

· Strong commercial acumen including budgeting, rostering, and cost management

· Confident coaching and mentoring skills with a hands-on leadership style

· Familiarity with Forbes service standards and embedding luxury behaviours into the guest journey

· Excellent interpersonal, organisational, and communication skills

· Experience working with key internal stakeholders and managing large group dynamics

· NSW RSA certification

· Flexibility to work early mornings, weekends, and public holidays
