Description:

The Food & Beverage Manager is accountable for the operational excellence, commercial performance, and cultural leadership of a diverse portfolio of 16 Food & Beverage outlets, spanning both on-mountain and village locations within the Thredbo Alpine Hotel. Operating in a highly seasonal environment, the role provides strong, visible leadership across peak winter trading—overseeing teams of approximately 180 employees—with a focus on service consistency, cost control, compliance, and operational readiness. During the summer season, the role leads a streamlined workforce of approximately 60 employees, with an emphasis on revenue activation, events, promotions, recruitment, and business planning to drive sustainable performance and support the broader resort strategy.


About the Role

  • Provide visible leadership across all Food & Beverage outlets, ensuring consistent service standards, presentation, and guest experience
  • Drive commercial performance through revenue growth, margin delivery, and disciplined cost control, with full accountability for F& B P& L outcomes
  • Lead seasonal workforce planning, forecasting, and rostering to balance service excellence with labour efficiency
  • Support and grow Conferences & Events business through optimised menus, pricing, service models, and operational delivery
  • Drive menu, beverage, and product innovation in partnership with the Executive Chef, focusing on profitability and guest demand
  • Oversee entertainment and security programs as required, ensuring compliance, safety, and quality event execution
  • Actively manage guest feedback, promotions, and marketing initiatives to drive engagement and repeat visitation

Skills & Experience

  • Exceptional customer service, communication and conflict resolution skills.
  • Food Safety Supervisor Certificate is desirable.
  • A current NSW Responsible Service of Alcohol (RSA)
  • 5 years experience in hospitality at a senior management level
