About the Role
We are seeking a full-time Sous Chef to join our large-scale Conference & Events kitchen brigade at Rydges Resort Hunter Valley. Working closely with the Executive Sous Chef and senior culinary leadership team, you will support the day-to-day operation of a high-volume convention kitchen, delivering consistent, high-quality cuisine across conferences, banquets, and major corporate events while upholding strict food safety, quality, and brand standards.
This is a hands-on leadership role for a chef who thrives in a busy environment and leads by example.

• Lead daily kitchen operations across conference and event services, including high-volume food preparation, service execution, and plating
• Support the planning and delivery of conference, banquet, and event menus in line with client briefs and EVT standards
• Ensure consistent food quality, presentation, and timing across multiple simultaneous events
• Supervise, roster, and deploy kitchen teams to ensure efficient workflow and effective labour management
• Work collaboratively with the Conference & Events operations team and Planning teams
• Monitor food costs, manage stock ordering, and conduct accurate stocktakes to minimise waste
• Train, coach, and mentor junior chefs, fostering a positive, high-performing kitchen culture
• Maintain strict compliance with Australian food safety standards, HACCP, WHS requirements, and company policies

Skills and Experience
• Full, unrestricted working rights in Australia (job ready)
• Minimum 5 years’ experience as a qualified chef within premium, high-end, or large-scale hospitality environments, including at least 2 years in a supervisory or leadership role
• Certificate IV in Commercial Cookery (essential)
• Proven experience in high-volume, conference, banquet, or corporate event environments
• Strong leadership and communication skills, with the ability to motivate and engage a diverse team
• Sound knowledge of Australian food safety standards and compliance requirements
• Flexible availability to work a rotating roster, including early mornings, evenings, and weekends
