About the Role

The hotel is seeking a passionate and motivated Head Chef to lead our kitchen team. This is a fantastic opportunity to live and work in the Snowy Mountains, enjoying an alpine lifestyle year-round — with summers by the lake and winters on the ski slopes.


Horizons Lake Jindabyne is a resort hotel with a diverse food and beverage offering:

  • Embers Restaurant – a 40-seat restaurant open 5 nights per week (7 nights during peak season), featuring a seasonal, elevated menu.
  • Bistro – a 100-seat casual dining venue serving classic pub-style meals, open 7 days in winter and 5 days per week in summer.
  • Breakfast – buffet breakfast served daily to in-house guests.
  • Conferences & Events – a strong conferencing and events business, requiring menu development, planning, and delivery.

Skills & Experience

  • Proven experience as a Head Chef or Senior Sous Chef ready to step up.
  • Confidence in menu writing, stock control, rostering, and kitchen management.
  • Ability to work well under pressure and maintain a positive team culture.
  • Happy to be hands-on in the kitchen and keen to develop and mentor junior staff.
  • Energy, excitement, and a true passion for food.


Key Responsibilities

  • Lead and inspire a small, hardworking kitchen team.
  • Oversee day-to-day kitchen operations across all outlets.
  • Create and deliver seasonal menus for Embers Restaurant and high-quality, consistent bistro dining.
  • Manage conference and event catering, including menu design.
  • Order and manage stock, ensuring cost control and minimal wastage.
  • Write and manage kitchen rosters effectively.
  • Ensure high standards of food quality, safety, and presentation.
  • Work collaboratively with a supportive, friendly team.
