Key Responsibilities

The assistant outlet manager work across the Old Clare’s food and beverage offerings, including the Clare Bar, Restaurant and Pool Bar.


  • Support the Outlet/F& B Manager in overseeing day‑to‑day operations, ensuring service standards, productivity, profitability and compliance with hotel and venue policies.
  • Lead and motivate the team through positive, proactive leadership, driving staff engagement, retention, training, performance development and effective communication.
  • Manage staffing and labour controls, including rosters, overtime, leave, entitlements, handovers and cross‑venue team capability to meet service and financial targets.
  • Ensure full compliance with liquor licensing, health and safety, incident reporting, crisis management and risk controls, maintaining accurate records and qualifications.
  • Deliver exceptional guest experiences by managing complaints with care and urgency, anticipating issues, maintaining quality control systems and resolving problems proactively.
  • Drive revenue through a strong sales culture, implementing and tracking up‑selling and on‑selling strategies while controlling departmental expenses.
  • Maintain accurate reporting, financial controls, IT system knowledge and asset care, working with Finance and Senior Management to minimise risk and maximise efficiency.
  • Act as a brand ambassador for the venue, hotel and EVT, promoting properties, supporting other departments, and contributing to meetings, projects and events.


What You’ll Bring

  • Demonstrated experience supervising or assisting in high‑volume, multi‑outlet food & beverage operations, with the ability to identify, analyse and resolve operational issues quickly and effectively.
  • Proven people‑focused leadership capability, providing guidance, support and direction to colleagues while communicating with care, fairness and professionalism.
  • Strong guest‑centric service background, consistently delivering efficient, friendly and professional experiences and managing guest feedback or complaints with confidence and empathy.
  • Sound experience in compliance and risk management, including liquor licensing, WHS, incident reporting and maintaining operational standards with integrity.
  • Demonstrated ability to work collaboratively with trust and accountability, contributing to a positive, professional culture focused on team development, operational excellence and commercial success.
