The ideal candidate will possess not only the technical requirements of the job, but also the personal qualities that make him/her an inspirational leader who earns the confidence of those he/she serves. The person who accepts this role will be expected to lead by example and view no job as too big or too small. This Food & Beverage RD should have a strong work ethic, work efficiently and independently, and maintain great organizational skills.
1. Performs frequent audits of safety, sanitation, food quality, meal delivery at point of service
2. Encourages, educates and assists dietary employees in keeping a clean and sanitary workplace
3. Gathers feedback about food and service by interviewing guests and patients; obtains patient food preferences
4. Monitors that therapeutic and mechanically altered diets are prepared appropriately
5. Maintains weekly operating expenses and ensures financial goals are met
6. Maintain organized records and receipts
7. Check inventory and oversee that the weekly food order is placed by sous chef
8. Interview, hire and train new employees
9. Employee schedule with assistance from sous chef
10. Provide staff in-services and training
11. Request equipment maintenance
12. Cover dietary shifts as needed
13. Works with the Registered Dietitian (RD) to create menus and recipes; ensure menu extensions are followed
14. Assists RD in completing Section K of MDS and some minor clinical work as needed
15. Gathers information regarding patient's nutritional status to provide information to be used in care plan meetings
16. Communicates well with RD and other department managers
