Summary

The Club Dining Cook 4 supports cooks by performing various tasks including prepping ingredients, packing timbales, organizing food storage areas, gathering ingredients and equipment.

Promotes and follows LJBTC, Inc.’s Signature Service standards and requirements ensuring a lasting impression of exemplary service resulting in supremely satisfied and loyal members and guests.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

  • Washes, peels, slices, and mixes vegetables, fruits, or other ingredients for salads, cold plates, and garnishes.

  • Carves and slices meats, cheese, portion food, prepared fruit, seafood cocktail and hors d’oeuvres.

  • Measures and mixes ingredients to make salad dressings, cocktail sauces, gelatin salads, cold desserts, and waffles, following recipes.

  • Prepares menu components in accordance to standard recipes and verbal instructions.

  • Assists all stations in the setup of mise en place for all menu and related special items.

  • Adheres to proper rotation and sanitation standards at all times.

  • Assures overall freshness and quality of all food items.

  • Properly closes and turns over work area at the end of shift assuring proper storage and minimal waste.

  • Attends regularly scheduled kitchen meetings.

  • Must obtain and maintain a current San Diego County Food Handler card.

  • Other duties may be assigned.

OUTCOME

The proper performance of the prep cook position will enhance the overall dining experience and ensure compliance with sanitation regulations. Consistent high-quality standards, accurate food preparation, and attractive food presentation will result in overall guest satisfaction and repeat customers.

QUALIFICATION REQUIREMENTS

EDUCATION and/or EXPERIENCE:

High school diploma or general education degree (GED); or one to three months related experience and/or training; or equivalent combination of education and experience.

LANGUAGE SKILLS

Ability to read and comprehend simple instructions, short correspondence, recipes, and memos. Ability to write simple correspondence. Ability to effectively present information in English to managers and other employees of the organization.

MATHEMATICAL SKILLS

Ability to add, subtract, multiply and divide. Ability to calculate figures and amounts such as discounts, proportions, percentages and volume.

REASONING ABILITY

Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.

CERTIFICATES, LICENSES, REGISTRATIONS

Must obtain and maintain a current San Diego County Food Handler card.

The noise level in the work environment is usually moderate to loud.

INTERACTION

Employees in this position interact with all kitchen co-workers and dining room staff on a daily basis. Occasionally interacts with maintenance, front desk, and other designated internal customers. On occasion, employees may interact with visitors, guests, vendors, or other external customers.

SCHEDULING

This company operates seven days a week, 24 hours a day. Shifts will generally be rotated as much as possible to be fair to everyone. At times it may be necessary to move you from your accustomed shift if business or task assignments demand (i.e. holidays, weekends, and high-volume business periods). In addition, it should be understood that business needs determine the number of hours that you work.
