SUMMARY:

The Cook is responsible for preparing the preparation of food to be served to employees, complying with all applicable sanitation, health, and personal hygiene standards and following established food production programs and procedures. The Cook is also responsible for appropriate use of facility supplies and equipment to minimize loss, waste, and fraud.

ESSENTIAL DUTIES AND RESPONSIBI8LITIES: Other duties may be assigned to support the department or other departments as time allows.

  • Safety is Lynden’s first responsibility to our employees and our customers. This position is a safety-sensitive position and the ability to work in a constant state of alertness and safe manner.
  • Prepares preparation of food served using established production procedures and systems.
    • Determines amount and type of food and supplies required using production systems.
    • Ensures availability of supplies and food or approved substitutions in adequate time for preparation.
    • Sets table; serves or ensures proper serving of food for dining room or area.
  • Complies with established sanitation standards, personal hygiene and health standards. Observes proper food preparation and handling techniques.
  • Stores food properly and safely, marking the date and item.
  • Reports necessary equipment repair and maintenance to Service Center Manager.
  • Correctly prepares all food served following standard recipes and special diet orders.
  • Plans food production to coordinate with meal serving hours so that excellence, quality, temperature, and appearance of food are preserved.
  • Apportions food for serving.
  • Maintains daily production records.
  • Keeps work area neat and clean at all times; cleans and maintains equipment used in food preparation.
  • Completes food temperature checks and logs before service.
  • Experience in using cutting tools, cookware, and bakeware.
  • Knowledge of various cooking procedures and methods (grilling, baking, boiling, etc.)
  • Control food costs in and out of the kitchen with proper recipe execution and waste management.
  • Adheres to all State of Alaska, Food Safety and Sanitation Programs, regulations, and laws.
  • Maintains a current State of Alaska Food Worker Card.

QUALIFICATION REQUIREMENTS:

EDUCATION AND EXPERIENCE:

High school diploma or general education degree (GED). A professional diploma in food service or equivalent food service cooking experience. Diploma from a culinary school will be an advantage.

LANGUAGE AND SKILLS:

Must have the ability to read and interpret documents such as cookbooks, recipes, cooking equipment manuals, procedure manuals, employee and safety manuals; ability to read, write, and interpret routine reports and correspondence; ability to communicate effectively with employees, contractors, vendors, managers, and other individuals.

Adept at working effectively in high energy and busy environments. Willing and able to work evenings, weekends, and holidays. Passion for good food and must enjoy working with food.

Key competencies. Produce large quantities of food well, manage time well, and is a clear and effective communicator. Must be flexible, customer/employee focus, and stress management/composure.

Must have a working knowledge of Windows 2000, Word, Outlook, and Excel programs.

MATHEMATICAL SKILLS:

Ability to add, subtract, multiply, and divide two-digit numbers. Ability to read and comprehend proper cooking temperatures from Celsius to Fahrenheit (and vice versa) and converting temperatures, changing quantities of ingredients provided by a recipe and working out cooking times based on weight.

REASONING ABILITY:

Ability to understand detailed written and oral instructions; ability to prioritize and problem-solve in time/safety-sensitive situations.

Ability to organize and follow through to completion projects and tasks assigned or assumed; ability to provide objective and decisive action(s) necessary to resolve any/all issues with minimal disruption to operational performance.

This job operates in a kitchen environment, housed with equipment such as an oven, stove, dishwasher, slicer, coffee machine, mixer, and chefs knifes. The employee is frequently exposed to heat, steam, fire, and noise.

This position may require travel for short periods of time (one to two weeks) in outside weather conditions, including incremental Arctic conditions.

While performing the duties of this job, the employee is occasionally exposed to moving mechanical parts.

The noise level in this work environment is usually moderate.
