About the Role

We are looking for a Full-Time Sous Chef to join the team. You will play a pivotal role in managing and coordinating the production of food across all areas of the hotel, ensuring efficiency and profitability. You will be responsible for approving all prepared dishes leaving the kitchen, maintaining the highest culinary standards, and guaranteeing that all food is stored and prepared safely and hygienically. This position requires overseeing the day-to-day operations of the kitchen, ensuring all sections and staff are ready for service, and that standard recipes and production specifications are consistently followed. Working closely with the Head Chef, you will strive to meet budgetary targets while delivering exceptional dining experiences for our guests.


Skills & Experience

  • 2-3 years' experience as a Sous Chef in hotels, restaurants or bistros
  • A genuine passion for food and experience across all kitchen sections including the grill, pass and pans.
  • Experience with menu development and creating new dishes.
  • A solid understanding of kitchen financials including labour and food costs.
  • Experience training and developing staff.
  • A strong work ethic and commitment to excellence.

Key Responsibilities

  • Maintain Culinary Standards: Ensure all hotel kitchens consistently produce high-quality food that meets guest expectations and adheres to established recipes and specifications.
  • Oversee Food Safety & Hygiene: Monitor food storage, preparation, and rotation to maintain safe, hygienic practices and compliance with WH& S guidelines.
  • Manage Kitchen Operations: Supervise daily kitchen activities, including staffing, rostering, and delegation of duties to ensure smooth and efficient service across all outlets.
  • Control Costs & Resources: Achieve financial targets by managing food and labour costs, monitoring stock rotation, and minimizing waste and spoilage.
  • Collaborate Across Departments: Liaise with the Executive Chef, F& B Manager, and outlet supervisors to coordinate restaurant and banquet functions for seamless operations.
  • Deliver Exceptional Guest Service: Anticipate and respond promptly to guest needs, resolving any issues or complaints to maintain high satisfaction levels.
  • Train & Develop Team: Hire, train, and supervise kitchen staff, fostering a productive and harmonious team environment while maximizing efficiency.
  • Maintain Equipment & Standards: Ensure all kitchen equipment is properly maintained, work areas are clean and functional, and mise en place standards are consistently upheld.
