About the Role
This is an exciting opportunity to join Rydges Canberra as a Senior Chef de Partie, working alongside our talented Executive Chef and dedicated kitchen team. You'll play a key role in leading daily operations at The George Bar & Grill, a stylish atrium restaurant known for its premium dry-aged cuts, locally inspired dishes, and relaxed yet refined atmosphere. From breakfast buffets to à la carte dinners, you’ll help deliver high-quality food across all areas of the hotel while maintaining top culinary standards, food safety, and team productivity. This hands-on role offers the chance to grow your skills, contribute to a dynamic kitchen culture, and develop your career across all aspects of venue operations.

Skills & Experience
• 2+ years’ worth of experience in hotels, restaurants, or bistros.
• Experience across different sections including pans, grill and larder.
• Ability to train and mentor junior staff.
• Strong communication skills and a positive, can-do attitude.
• Attention to detail, well-presented and high standards of cleanliness.
• Ability to multitask and perform under pressure, while still delivering a high standard.
• A strong work ethic and commitment to excellence.

Key Responsibilities
• Ensure consistent high-quality food production across all hotel kitchens, adhering to standard recipes and portion control guidelines.
• Prepare and present a variety of dishes including sauces, soups, hot meals, pantry items, and specialty menu offerings with proper garnishing.
• Maintain food safety and hygiene standards, including correct storage practices and a clean, safe working environment.
• Monitor inventory and requisition supplies in line with hotel policies to support efficient kitchen operations.
• Demonstrate strong product and recipe knowledge, staying up to date with menu items and maintaining WH& S compliance.
• Foster teamwork and professionalism, maintaining grooming standards and positive relationships with service team members.
